How to cook ofe ede (cocoyam soup) with Ugu ( pumpkin)

Ofe ede also known as cocoyam soup is a type of soup that is common in igbo land. The igbos use ede (cocoyam) to

cook  different types of soup. Examples of soup made with ede are Ofe onugbu ( bitter leaf) soup, Ofe oha, Ofe

Nsala, Ofe Mpoto ede (cocoyam leaf soup), etc.

So in this article, I will show you how to make cocoyam soup with pumpkin.

The items you need are;

Pot

Big spoon

Mortar and pestle

Small basin

Burner

Ingredients :

Ede (Cocoyam)

pepper (Blended)

crayfish (Blended)

protein

palm oil

ugu (pumkin)

onions

seasoning

Ogiri

salt

Note; If you do not have a mortar, you can use cocoyam flour. So I used cocoyam yam flour to prepare mine.

Procedure:

Wash and cut the vegetable and set aside.

Wash and season the protein.

Add palm oil, crayfish, pepper, seasoning and ogiri.

Add a little water and allow to boil for about 10 minutes.

Add the cocoyam flour gradually and stir as you do so to avoid lumps.

Add salt to taste. Allow to boil for 20 minutes.

Finally, add the pumpkin and allow to cook for 2 minutes.

Serve with any swallow.
